This year I have been trying to move closer to vegan, but the transition is hard when you are not a good cook and the world makes eating death so easy. It is kind of amazing when people start asking questions about my vegetarianism, there is are many misconceptions as to  where our food comes from. When you tie into all of our gluttony with the problems of food &amp; water security around the world, I think it makes the transition to conscientious eating (if not some version of vegetarianism) quite easy.  There is a Jesuit priest named John Dear who has plenty to say about this and other topics.
